Blueberry Breakfast Cake

INGREDIENTS:

-1.5 Cup Almond Flour/Meal

-1/2 tsp baking soda

-1/2 tsp sea salt

-egg replacer for 4 eggs (I used gelatin replacer recipe). ***

-1 inch fresh vanilla bean

-1/3 cup honey

-blueberries

Boil 1 cup water and add 1 packet of gelatin. 12 tablespoons will replace the eggs in this recipe. So take 12 tablespoons and simmer the vanilla bean. When it softens, cut down the middle and scoop out beans from the inside. Add the honey. Turn off heat and let this steep for a few minutes.

Mix all ingredients together except blueberries. Put in a glass pie dish, top with blueberries and bake at 320 for 45 minutes. When it comes out it will be mushy but will firm up when it cools.

Serve with a side of fresh berries.
